SHARPENING
First, sharpen with the knife tip down.
Initially, point the tip down and draw your knife through to sharpen your knife. Pointing the tip down grinds and reshapes a blunt knife edge by removing material.
HONING
Then hone your knife with the tip up .
Then point the tip up and draw your knife through to hone and polish your knife. Pointing the tip up does not sharpen by removing material. Instead it restores any bent parts of the edge , resulting in a straighter, sharper edge. You will need to sharpen initially and periodically, and you will hone most of the time to maximise the life of your knives.
